Properties and uses:
Betony is a perennial plant that prefers sunny spots. Considered a root vegetable, the root can be harvested from October through November. The roots are cold resistant, and they have a delicious and delicate taste, like artichoke or Jerusalem artichoke. This perennial is ideal for the front of vegetable gardens, orchards or among other summer-flowering perennials. It is also drought tolerant.
